Easy Recipe For Banana Pancakes – They Are Healthy, Hardy, And Delicious!

Pancakes are a treat and yet can still be considered a healthy food.

Sunday morning special at my house is pancakes!

Banana Pancakes 🥞 with blueberries 🫐 are our favorite! We also substitute chocolate chips instead of blueberries just as delicious 😋! You can mix them into the batter or just sprinkle them on top!

I love to top with fresh fruit and chopped almonds and flax seeds! So yummy and delicious power-packed full of goodness!

You can use all whole grains in this recipe if you want. Sometimes I do one cup of whole wheat and one cup of oat flour. Works great!

These should be about 100 calories a pancake as long as you don’t make them too big.

Two pancakes, some fresh fruit, and a coffee and you have a well-rounded breakfast for 300 calories.

Pancake Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup oat flour
  • 2 teaspoons baking powder
  • 1 tablespoon white sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup of milk
  • 2 tablespoons butter
  • 2 ripe bananas, frozen
  • Splash of vanilla

Mix everything in a kitchen aid stand mixer.

I like to use frozen bananas that are peeled and just throw them in still frozen, it adds.

I cook mine on a griddle pan. I can do about six at a time.

The recipe makes about 12 pancakes 🥞.

Cook on medium to low heat and be patient.

I usually turn on the stove to medium for the first batch of pancakes and then turn down the flame to low for the second batch.

I top mine with fresh berries, nuts, and seeds. And sometimes chocolate chips ;p !!!
