Peanut Butter Easter Peep Cookies — The Perfect Springtime Treat

This recipe is to die for! It is so good and uses up your leftover Easter Peeps.

Finding fun ways to use leftovers is something I have always enjoyed doing. I think it’s the challenge of making something desirable out of the undesirable.

I once made a wonderful wrap out of leftovers in the fridge, after I sourced it they asked what do you call this and I simply answered “leftovers”.

Some things can never be recreated …

Ingredients

  • 1 1/2 cups flour
  • 1 stick butter
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar ( 1/2 brown 1/2 white)
  • 1 egg
  • 1–2 Tablespoons peanut butter
  • 1 1/2 packages of peeps cut up into smaller peaces
  • Splash of vanilla

Freeze cut up peeps for a few hours before use if you can remember, it helps them stay more in tacit while baking otherwise they can melt down.

Preheat oven to 350 degrees F

Mix all ingredients together

For the peanut butter, I used a big spoon out of my silverware drawer.

Bake 9 minutes.

Let cool completely before eating because the marshmallow is very hot and can burn you.
